Why do you think you need 2 different graphics cards?

If you do not have access to a Mac then buy the GT210 for installing Snow Leopard from Sata Optical disc. If you are able to get Mountain Lion from the App store then go for the GT610.

You need to use DVI/HDMI as VGA will not work, and note that a GT210 will not give audio via HDMI.

Use a Seagate or Hitachi drive of similar spec to avoid problems with the WD blue that you linked with. WD are fine if used for storage/data - Don't use for the OS and apps, can be problematic as the firmware on the drives is better suited to other OS.
