Install Clover Legacy mode on your Sandy Bridge hardware and you should be able to boot from the HDD.
Thanks again for the advice. Sorry to say but I'm still struggling to get this working. I've tried all sorts but nothing appears to work. I installed Clover Legacy downloaded here https://www.tonymacx86.com/resources/el-capitan-post-install-tools.294/ but the system will not boot from Clover with any options, seems to be stuck in a reboot cycle now. The only way I can get the system to boot is with the aid of my Unibeast created USB but then I have many issues including SoundAssertion in AppleHDA, Missing Bluetooth Controller Transport etc etc. The system does eventually boot but the keyboard and mouse take an eternity to start working. Once I'm in everything appears fairly responsive but jumping through hoops to get the the desktop is wearing me down.
Should I perhaps create a new bootable USB using Clover/M-Lion and start from scratch? Using this method with El Capitan was the only way so far I've managed to create a system that would boot from the HDD.
