My current setup is this:

Asus Prime 370P
i7 8700k
16 gb ddr4 3200mhz
GTX 1070 ( can disable if needed )

I want to be able to swap from os so one ssd or hdd for windows 10 and one for macos.
Would this be possible?

Your system is compatible with MacOS High Sierra 10.13.6, but not the latest Mojave due to the lack of Nvidia web drivers (unless you remove or find a way to disable the GTX 1070 and run on CPU integrated graphics).
