So that is what I'm planning on buying. I have case, power and a monitor. I do need this system to also boot to Windows which I plan to get and running first. Nervous about the whole thing. Any last minute advice before I buy?
 
Looks good. You are doing the right thing buy using 2 separate SSD's for dual booting. The only think I might suggest is swapping one of your SATA SSDs with an NVMe SSD. You have the slot, you might as well enjoy some extra speed.

This build should be compatible with MacOS Catalina (but not older versions because of the 5700 XT).
 
Get the EVO+ NVMe 500GB currently price dropped from $120 to $100USD. The price on RAM is just a few bucks more for the 3600/28800 CL16. Check MicroCenter.
