I would like build my first hackintosh. I choose CPU: Intel Core i7 6800K. This CPU base on socket 2011v3, but on this website is little information about this socket.

Which motherboard with 2011v3 is the best for hackintosh?
Which RAM is good?
Is good choice SSD - Plextor or Samsung?

The CPU should work, maybe you need Fake CPUID, because I don´t know if Haswell-E is supported.

Which RAM is good?

Many RAM sticks from different companies work with mac OS, maybe Corsair Dominator is something for you.

Is good choice SSD - Plextor or Samsung?

Are you planning to implement a "normal" SSD or a Nvme SSD?
I implement a Samsung 850 Evo in my notebook and it works fine.
