This is my first ever build and everything is a bit over whelming. I'm thinking of setting up a raid 0 ssd disc as the boot up disk for the system, but when I went and read threads on how to do it, I get confused quickly... this is probably because I have no idea what the installation process will be like, I'm still just getting my head wrapped around the hardware stuff.

With that in mind, is setting up a raid 0 as the boot up disc extremely challenging? Should I just avoid it, and only buy a single disk? Or is it relatively easy and should I buy 2 ssd drives to stripe together?

In my opinion, using RAID 0 for anything other than a scratch disk is asking for trouble - there's zero redundancy (that's why it's called RAID 0). It's worse than using a single drive because you have two points of failure instead of one - you lose one drive and you've lost all your data.
