EIST as far as I have noticed when enabled (or disabled i don't remember) will report to osx what your overclock is and it will show in the "About This Mac" window. You can still be overclocked and still have the advantage it brings without the cosmetic reporting if you want. CPU PLL Overvoltage (what i am assuming you are referring to) should be turned off on your motherboard since its only used for extreme overclocking and it will break sleep when enabled.
