Does VRAM matter?

Hey, probably my first post here, lol. But, I've been meaning to make myself my second custom rig and my first hackintosh, and so since this computer will also feature Win8 and since my budget allows, i was thinking why not get two cards. I know SLI isnt supported on OSX by its nature, but does that mean it wont boot when i have the SLI bridge and 2 of the cards plugged in? or will it just recognize one card? I'm totally fine with one card on OSX working fine, but was just wondering. Also, does VRAM matter that much in the hack process? all the links on the buying guide directs to 2GB 670's and 680's. I'm thinking of getting two GTX670 FTW 4GB, 16GB of Dominator Platinum, the UP5 board, and an 3770K, all housed in a nice case (I'm thinking HAFX.) If someone can assure me (until some extent of course) that VRAM wont screw me up, and that putting 2 cards wont either, I'll be buying these+ making a nice guide for all.
