Hi all. Been a few years since I last ran a Hackintosh (2500k Intel build). My current build is:
  • AMD Ryzen 3700X
  • Gigabyte Gaming OC 6700XT
  • Gigabyte Aorus X570 I Pro WIFI
  • 16GB (2x8) Crucial Ballistix DDR4 3600 MHz RAM
  • 960GB Corsair MP510, M.2 PCIe 3.0 NVMe 1.3 SSD
  • Several Noctua fans and cooler
From a cursory search I may need to swap a chip in the motherboard out for Wifi and/or Bluetooth to function properly. If I do need to do this, is this the only requirement for full compatibility?

BigSur isn't support 6700xt

The RX 6700 XT is not supported on MacOS as of now, and there are no indications that it will be supported in the future. It all depends on whether Apple will add support for it in future versions of Big Sur or Monterey.

So if you want to install and run MacOS on your system now, you will have to replace your graphics card with a supported card, say RX 6800 (supported on Big Sur and the upcoming Monterey).
