Changing my system definition = won't boot

I am trying to get more efficient power management, and following this thread on generating an SSDT I get an "Unknown Processor Model." That stopped that pursuit in its tracks as I need to figure out how to get past it.

After reading a few threads here I thought it was related to my system definition. It appears that my CPU (i7-6700k Skylake) shipped on the iMac 17,1 but my currently running well system is reported as iMac 14,2.

I though, ok no problem..I'll go into Clover Config, change it and reboot.

Nope.

I get the white apple on the black screen and the little loading bar goes about 1/2 across and my screen goes blank :(

I was able to roll back the changes w/ a back up config.plist I have, but how do I successfully change my system definition?
