Edited for better context
The update went through virtually like normal, but when it was time to boot into Catalina I would get a very quick panic and reboot. I’ve managed to get a couple of screen shots from -v but it’s very fast. From what I can tell from the print out all of my kext fail to load.
The fix for now is to disable all SATA ports in bios.
Leaving ACHI enabled or disabled has no effect.
Having a drive connected or disconnected has no effect.
Disabling extra SSDT’s has no effect.
Behavior is the same with Clover.
IOReg looks great and everything is working as expected. Does anyone have a clue what could cause this?
SOLVED: Added AppleAHCIPortHotplug.kext and it stopped the KP.
I couldn't replicate this.
Have tried:
Different AppleAHCIport injectors
Different SMBIOS

Did the update from 10.14.6 and couldn't get it to boot. Eventually, I found that if I disabled all SATA ports (keeping AHCI enabled as a whole) in BIOS then it would boot smoothly. This, on OpenCore 0.5.3 and 0.5.4.
Lower Geekbench score but overall feels snappier and is stable as any other.
For the SATA issue, it doesn't matter which port nor whether or not a drive is connected. Simply if any of them are enabled I get a panic and reboot at the top of the progress bar.
@pastrychef, you're my go to here. Any chance you have a clue what's up?
