I followed https://dortania.github.io/OpenCore-Install-Guide/ (including https://dortania.github.io/OpenCore-Install-Guide/clover-conversion/) to migrate from Clover 5120 to OpenCore 0.7.2 because people in https://www.tonymacx86.com/threads/update-directly-to-macos-big-sur.304629/ say that it is more reliable.

The OC boot menu shows options to boot macOS or to load the recovery image. However, no matter which of those options I select, it boots into recovery. When I switch back to Clover, the machine boots properly.

I assume this means I missed something in the conversion, but I cannot figure out what.

I have attached both configurations here. Can anyone help me figure out what is going on?

Did you ClearNvram and reboot the system when booting from the OpenCore installer, i.e. before you tried booting into the Catalina installation?
 
You want to use SecureBootModel = j137 or Disabled. Default will use x86legacy, which only works with Big Sur/Monterey.
