I'm running a hackintosh with an Aorus 5 Z370, i7-8700K, 1050ti, et c. on High Sierra.

Is it possible to set up a second drive with a copy of Snow Leopard on this set-up ?

No. No support for your hardware in Snow Leopard. You can buy an older Sandy Bridge based system if you need SL for some reason. The HP Elite 8200s work well for this with a compatible gfx card.
 

Make sure to get the SFF form factor and not the USDT. You'll need a gfx card like an 8400GS or GT210 for it to work.
