Can anyone tell me if startup commands like Command+s or holding down the option key work when booting and using an Apple BT Keyboard and a BT dongle?
 
No, I highly doubt that. Those are for the Apple EFI, not OS X itself. You can do the same things through the Chameleon boot loader.
 
OK, so to change the boot disk I would just use the bios. And to enter single user mode I can use '-s' using unibeast?

not needed - at the Chimera time out screen hit any key and the timeout stops, chimera presents you with icons for your discs/partitions and waits for you to select one and hit enter. Select with left-right keys to hi-lite icon you want to boot.

And to enter single user mode I can use '-s' using unibeast?

Again, hit a key at Chimera timeout screen and then just type in -s, -v, -x or other boot flags as needed, then hit enter
