Big Sur unstable -- no SATA after a few hours.

I've run a hackintosh for the last 4 years. Catalina 10.15.7 runs perfectly. I'm using Opencore and upgraded a copy of my system to Big Sur 11.1 without a problem. Big Sur runs great for a few hours and then it's like the SATA controller dies. No access to any disk until the system freezes. It happens when I'm in the middle of doing stuff, or if I let it run all night then it's frozen in the morning. Very reproducible problem. Any clue? (luckily I still have a copy of Catalina that I'm using now)

i had a similar problem with big sur and it was the m2 disk some unbranded one, got a gigabyte 256GB and its been on for a few weeks and no problem, not what disk you have installed, but the catalina install would work with the unbranded m2

Thanks, but this is a SAMSUNG 850 EVO 2.5" 250GB SATA III (not M.2).
I can try another SSD, but I don't have high hopes.
