Big Sur, step by step - some questions

Hello,
I'm looking to upgrade a not currently working Yosemite installation.

I'm a bit confused by the steps though.
I can't follow the update directly steps as I don't have a working machine.

Here's where I am at.

I've downloaded Big Sur and made an installation disk on USB.
No bootloader as yet (well I have an old one for Yosimite but that's not going to work for this).

Step 1 - Get a bootloader - should I be using Opencore or Clover?
How do I know which one to pick?

I'm using:
Gigabyte gaz97x-soc-force
4790k
Gigabyte gtx 970 windforce oc

Some questions relating to the bootloader:
How do I actually go about creating the bootloader, is this on the same disk as I've created the install disk?
How do I download from Github and what do I download?
Does the bootloader need to be added to the disk before making the install disk? I can go back and redo this step.

I have been round and round several times through various threads but it seems like each thread I find is another open loop and I'm a bit stuck on which bootloader to use!

For the benefit of others I'll document this whole process and post it so that others can see the steps I took to get a working build so any help given is a. gratefully received and b. will be passed on to assist others!

Useful information.
So, I basically need to keep on with my existing installation or upgrade my graphics card!

Or discard the graphics card and use your processor's integrated graphics instead.

It was going to be a video and music editing machine, but I guess it could be just music...
For my setup (using onboard gfx)
Do you know whether I should be using OPencore or Clover please?

Also, is there a guide for how to actually install them from github?

Clover has about run its course and now has to use elements from OpenCore in order to function with newer OS versions. OpenCore is the future and is much better documented.
