Big Sur is not updated since version 11.2.1
My system is Sandy Bridge Desktop in Open Core 0.6.8
iMac18,3 SMBIOS iMac (Retina 5K, 27-inch, 2017)
GA Z68A-D3H-B3. 16GB 1333MHz DDR3
Radeon RX 580 8GB
Any ideas????

Have you disabled SIP in OpenCore? Running with SIP disabled will prevent updates from showing up in System Preferences.
