I don't want Mojave/Catalina due to lack of nVidia support.

Z390 motherboards and the 9th generation Intel CPUs should still work with MacOS High Sierra 10.13.6 even though officially High Sierra does not support the CPUs.

My main system use a Z390 motherboard and an i7 9700KF and it works with MacOS Sierra 10.12.6 (Yes Sierra even) / High Sierra / Mojave / Catalina.

I am sure you are aware, but High Sierra will drop out of support once Big Sur is released later this year. If the software you use are compatible with High Sierra then you can stay with it indefinitely. But if you use MacOS for work (e.g. iOS apps development) you may eventually be forced to upgrade your OS and your GTX 1070 will then no longer be useful any more.

My main apps are ADOBE products, DaVinci Resolve, and other Video edting software. all are relaying heavily on nVidia GPUs.. I think this will be the situation for the next few years.

Will try to run the setup on that configuration later this week/month.
