a few noob questions

When building a Windowtosh, do the SSDs and HDDs matter? And the Power Supply? Also, will the new "i" series of Corsair CPU Water Coolers lead to any problem? Like the H100i or the H80i? Soo I guess that question would be do the CPU Cooler matter? And heck, ill go ahead ans ask this too. Can you run 2 EVA 680s in crossfire in the Windows OS and it not interfere with anything in the Mac OS? Will 2 run in the mac os?

Yup. As far as i know.
