I've had my hackintosh for a while now, about half a year, and recently noticed that in my system profiler, next to where it says "64-bit kernel and extensions" it says no. Is there any reason I would want to use the 64-bit kernel? Will it affect system performance?

Not sure where you mean.
Lion is all 64bit extension with 64 bit kernel...
One exception you can run a java 32 bit machine.

Older system was 32 bit but Snow Leopard ran 64 bit with capability to support 32 bit apps.

If you are running a 32 bit kernel or apps you will eventually have problems.

I can not tell you better because you have not told me enough.

Nvm, I deleted my old com.apple.Boot.plist and installed the 64-bit one from multibeast and it seems to be running fine.

Actually scratch that, it rebooted once fine, then I went and tried to install instant menu, and after trying to reboot it again, I got kernel panic, but I don't see why instant menu would do that. I had to pull out my iboot disk.
