Unfortunately, nothing seemed to work. Either I just got a bad card, or the Gigabyte version of the 210 just doesn't like to be run like a Mac
So, I broke down, waived the white flag, and bought an ASUS GeForce 8400 GS, and returned the Gigabyte 210. From what I read, they are basically the same performance wise, and they both have 1GB DDR3 of memory.
I put the new card in, and the only thing I changed was removing all boot commands except for GraphicsEnabler=Yes, and voila! Instant, QE beautiful graphics in all their Mountain Lion glory! The system profiler correctly identified the graphics card, and full resolution was achieved.
So, for anyone looking at this thread in the future, I ran into a dead-end with this particular graphics card. Maybe you're smarter than me
