Have you got at least the F4 bios update? Have you plugged the 40GB HD via usb or via Sata? Yourdestination HD should be in the Sata 0 port.

Re: Stuck at Installing screen I've installed with UniBeast 10.7.2 and then update to 10.7.4, have you try to redo the usb pen? maybe something is wrong there, I didn't have any problems trying to install my copy... Did you use USB 3.0 port? try using usb 2.0. I can see three icon, unibeast...
