the issue was that my USBInjectAll.kext was listed in my config.plist but was missing from the next folder. removed it from my config file and installed smoothly

It will now boot to a macos bigSur installer, install to the hard drive, then it gets stuck on the apple logo, with the progress bar at 85-90%, and a mouse cursor in the top left. al that was done was a fresh install of opencore. all files and paths are the same as before.
