P1LGRIM, Thank you very much for your suggestions. According to the manufacturer's website, the Z390 Aorus Pro Wifi support 8th and 9th Gen Intel Processors... so that's good.
I then reduced to essential components as you suggested (Motherboard with CPU, one DIMM and onboard graphics.)...

Turns out my "CustoMac Mini Deluxe" does not like the Micro-B USB Cables (I think that's what they are called).
I tried inserting a regular Micro USB Cable in (leaving the smaller portion of the port exposed) and it worked. Strange but as long as it works! Would still be curious to know why...
