Then follow your instruction to inject the parameters for my Radoen VII (in a genuine Mac Pro 2009) via the OpenCore config. Now the artificial limit is removed, and the GB5 score back to normal level in Monterey 12.6.1.

Unless you disable the iGPU, and change the SMBIOS to iMac Pro. MacOS will default to use QuickSync, and won't utilise the Vega's hardware acceleration.

Not sure what the logic is, but if I click "Scale" at the top, I can get this for my monitor.
In some setup, may have issue on DP but not HDMI (or vice versa).
What I found is force the GPU render the screen at HiDPI will help.
e.g. Your monitor is 2560x1440, and you force the RX580 render the screen at 5120x2880 HiDPI. The text usually will looks sharper.
