I just ran 'system_profiler' and this was part of the output:

So just to be clear, the displayed RAM in 'About this Mac' (16GB) is only cosmetic? Therefore the OS uses as much memory as is actually available (32GB)?

The patcher app was the trick. I removed nv_disable and voila!
Now all I need to do is get all the RAM to be recognized. Any input??

Which didn't fix anything.
Thank you for the in-depth and honest answer. I think I will go with the prescribed process rather than doing my own thing. It's been a while since I've built a machine!
My PowerMac 17" 2011 just died and the recently upgraded main disk is a Samsung SSD (working fine).
I'd love to build the hackintosh with officially compatible parts and just plunk that drive in and go.
It's running the latest (of this writing) update of El Capitan.
Impossible? Improbable...
