A CustoMac behaves exactly like a real Mac if you do it right. I don't think I will ever buy a Mac desktop again and continue building Hackintoshes just because not only do I think it is fun to custom build a computer, but also it is $$$$ cheaper.
Personally, I would continue to use a Hackintosh. Any mac mini or iMac that you can pick up cheap will feel woefully underpowered compared to your current machine. GTX 660 works natively so I don't see the problem there. If you really want to step up to a i7 that can give you a performance boost...

I'm fairly certain that the 7xx cards should pose little problems for you. The 6xx still offer great performance for the price as well and they are natively supported as well. It's pretty much up to you. I'm sure if you went with a 7xx card and ran into a problem someone on this forum had a solution
I never actually put the computer sleep. I just let the screen go black eventually. If I remember correctly sleep has never worked for me even on Lion.
