I have almost the identical system and am having trouble getting bigsur install to even load. Would you mind please sharing your EFI folder from the install usb?

I'm getting system freezes and think maybe it's wifi related. Only issue is, I don't have an original copy of S/L/E IO80211Family.kext and can't find one anywhere. Can you someone please help me out?

ok, so it seems NVRAM needed to be added to the bootloader, thanks. BUT, i still only have one monitor working.

Not quite what I meant. I mean, if hackintosh builds are done anyway, then why not use components that didn't require a whole lot to hack. ie, use components that through already existing kext files and other hacks, can be made into a hackintosh easily.
Like the MateBook Pro looks pretty...
So.... why don't they? It seems to me that if someone (Xiaomi?) just created a laptop where it a hackintosh install worked pretty much OOTB, then it would be a huge success.
Why has this not happened yet?
