If you want to dual boot this is how you do it:
Boot into installer from USB Drive
Open Disk Utility and Format to APFS
Install macOS
Boot into macOS but using the USB Stick
Install all the neccessary kexts etc (or copy the EFI file I sent you to the...
What I mean is, when you were formatting your hard drive during the installation, did use APFS or Mac OS Journaled?

Try that - see how you get on. Make sure to backup your current one.
Do keep in mind that you have a completely different motherboard so that will affect things - mine is a gigabyte one vs yours being an MSI one - just something to be aware of.

Regardin iMessage, have you set the correct serial nr in your config plist?
Open Clover Configurator
Mount your EFI partition
Open your clover.plist
Go to SMBIOS
Open Terminal
Type UUIDGEN
Copy the output number...

I currently have the itx hackintosh above as my home pc a 2011 15" as my travel machine (dual ssd) and I want to combine both into one machine, connected with one cable etc...

My machine has completely disintegrated unfortunately - major graphics glitches etc. Luckily I have windows to get me by.
Hey sorry for the delay I ended up reinstalling the whole thing again to see what's what and if my performance improves at all.
I have also since overclocked the CPU and RAM to 4Ghz and 3200Mhz respectively and it seems like there has been an improvement indeed.
