You can downgrade the BIOS, but in my case, that did not work, unfortunately. I can boot Ubuntu and Win10, but not opencore anymore, since last Elitebook G5 BIOS upgrade..

I can no longer boot catalina o 840 G5 latest BIOS as well.. Catalina on opencore.

There has been success with OpenCore and some elitebooks. You may try Catalina forums, there are opencore tutorials there

You can try kecinzer's repository on github, works great on catalina and is already based on Opencore bootloader.

I have read on other forums that the 17 G3 works fine with the gtx 980m and the 1060m as well. I think those wont work with catalina, thought... I have a 17 G3 and for some time I had mojave running fine with the quadro disabled...That way the system was really stable
