You cannot build installer with UniBeast with that download but you can run the app and update from older version of currently installed OS version.
I just tested this for Sierra and I have the same problem. I think that main cause for this issue is that Unibeast at the time of compile accounted only for those installers from Apple App Store.

I don't know, posibly limitation of the genuin Mac hardware, maybe you should try changing the date directly in BIOS and verify from terminal that change is accepted before you proceed.

I had the same problem but on a hackintosh machine. The thing is that my system date was correct, today's date and time, I just changed the year only back to 2016 when this version was actual and it worked for me. I tested this today so information is fresh.

Did you tried Universal audio codec VoodooHDA from Multibeast? Try it with it if you didn't tried already.
I don't know about bluetooth but your adapter might not be fully compatible with Mojave. Wait for more replies, someone might know if there is an option to fix that issue.
