Could you acces to the Apple install?
I use your original efi to try install from 0 and on the installer the sistem reboot and dont entry un the instalación only reboot

I try Catalina and Big Sur

Sorry, I don't understand what do you want to mention about "Apple install". Please make it clear or take pictures.

The isue was because the bios dont save a configuración and dont allow me to run the Catalina installer

Now all is ok

My CPU is core i5-5300. I have tried to config but it did not work for me. for EFI I used for Catalina is fine but for Big Sur it says "SIP is disabled"

I managed to install Big Sur 11.6.1 but it was touch and go lol. Thought I screwed it up a couple times.Got caught up in a boot loop and a hang during boot.Took a bit to figure it out. Dual booting another macOS is very useful for setting up a new install. It all seems to all be working. Managed to get the sound, VoodooHDA working which was the only issue after update. I had to use Thienluong89 usb map to get big sur to boot with xhciportlimit disabled. Something must be wrong with mine.I made it almost 2 yrs ago and never had an issue with it but defiantly used different methods to make it by the looks of the kext content. Took the 11.6.1 update and had to copy voodooHDA.kext to library/extensions to get sound to work. Boot seems to take forever but it does get there. have yet to deal with camera.

The problem was i cant boot to the installer Catalina but Now is ok

One silly question
Could you put a boot volume by default in Opencore? I use ctrl + enter but dont works

Set default boot may don't effect at first time after you restart/shutdown. You can try shutdown and boot several time (do not restart machine).
If still don't work try NVRAM reset.
I have same problem before.

Try modify your config.plist by delete value of csr-active-config in below picture
