After some booting issues of the installer under Clover 5110 (I would get an Apple and then a shutdown [in verbose I saw an indication it had something to do with airport]), an accidental update to 5123 instead of 5122, and and calamity trying to boot from my original install USB (remade with wife's Apple laptop and created with current 10.15.7 update files and Clover version 5119) I used the USB install USB to replace the failing boot drive EFI and updated it with my previous config, extensions and USB mapping files. Then the update was as smooth as butter... it was a bad Saturday.... the good news is out of all this, my Apple Watch opens my computer again and Sidecar / Handoff all work flawlessly now.

Sure thing, create a new installer usb with an older version of Clover (I used 5122) I used the USB install to replace the failing boot drive EFI and updated it with my previous config, extensions and USB mapping files.

1) Boot to macOS using your USB stick to boot to your normal drive not the installer
2) Mount the USB installer EFI
3) Make a copy of the EFI on desktop
4) Unmount USB installer EFI
5) Mount macOSX EFI
6) Make a backup of your ruined EFI folder somewhere safe (you need your USB files, Config, Extensions etc. from this folder)
7) Delete the EFI folder from the macOSX EFI
8) Copy the EFI from Desktop to macOSX EFI
9) Copy your config, USB maps, KEXT's and anything else you had to add to make your installation work right from the "bad" EFI folder into the new macOSX EFI.

*** Your results may vary, if you don't feel comfortable with this process you can use one of the installation guides to reinstall the EFI via MultiBeast, etc.

NOTE: I wanted to upgrade to Big Sur, this led me to change over to OpenCore soon after the trouble I had, I am very pleased with the performance and experience in working with this new bootloader. You might try this as an alternative as well. https://dortania.github.io/OpenCore-Install-Guide/

Ya, it is the quirks, and I just couldn't' get it to work with my Skylake. Got frustrated with it and decided to start over and read about OC, decided to pursue it and am very happy with it.
