Is it better to upgrade on my existing OS X ? or erase drives, clean install and recover data with time machine?
Either way will work. Personally I prefer the clean install method, especially if going from Lion to El Capitan. If you were to clean install El Cap you can simply follow the legacy install guide and use your HD3000 graphics to keep things simple.
Multibeast installs Clover for you, other than that you need the specific kexts for your motherboard's audio and LAN chipsets. You could also make a bootable clone of your Lion drive if you want to keep that as a backup ICE.
 
@guardian4ce, it is possible to get your GTX 570 working with Mojave, but it will require some work
Fermi GPUs (GTX 4xx, 5xx) Highest Supported OS: Sierra/High Sierra 10.13.6(with some work, current/Mojave 10.14.4)

Well Mojave actually pulled official support for these cards from Mojave but thankfully you can just chuck the old High Sierra drivers back in and you’ll be good. Nothing too important to add for Fermi specifically, just understand since it’s no longer OOB you may have odd driver issues so only use your Fermi card in desperation. Users have reported issues with High Sierra so using those drivers can cause some issues. And I won’t make a list of compatible graphics cards due to the nature of no longer being official as I don’t want someone to stumble upon this thinking their GT610 is compatible without any work. Also I've been hospitalized for a month with Crohn's, cut me a break ;)

You can't download HS unless you are already running at least Mt. Lion. You are on Lion.
 
I have access to a macbook pro that runs Yosemite! I guess I can do it from there?
I can't seem to find HS on the app store though. Actually I can only find Mojave. Any way around it ?
 
I got happy for a sec but then got "This version of macOS 10.13.6 cannot be installed on this computer."
I am running Yosemite but it's an old early 2008 model.
Any other way ?

Either change the SMBIOS to one that does qualify for the OS upgrade or download the highest version that you can, install and then upgrade.

I found some other links but they're not apple related and I don't know if I should trust them
The mere mention of this can be enough to get you a ban here.
