Starting out - what system for a (savvy) newb?

Thanks for all your help, I have the machine built and I'm working on getting High Sierra installed (is it supposed to take _forever_ on the first boot-up off usb?)

Many thanks to all of you who offered advice and support. I now have my machine up and running with all the bells and whistles (well, I'm still waiting for the Fenvi card to improve bt/wifi) - it was easier than I feared it would be, mostly because of you all.
