I tried installing it via the Mac App Store app's inplace upgrade and a Unibeast-made USB drive. I can boot to the installer but I keep getting NVDAStartup issues. I've tried several combinations of boot flags to no avail. I use both the VGA and DVI ports.

I kept getting stuck during boot around the "PCI configuration begin" stage. No amount of Kernel flags would help. I installed the AppleACPI Rollback 10.9.5 (in latest Multibeast) and it booted right up. Give it a try.
That looks exactly like the wi-fi card in the new Late 2012/ Early 2013 iMacs. The current ones are the same shape, size and number of antenna connectors.
I ran the Combo update but I couldn't get a successful normal boot. Put my machine into Safe Boot, deleted /Extra and ran CustomBeast again. Everything works great now.
My hackintosh uses a GA-P55A-UD4P and I used a LaCie iamakey on it last night (though it's not specifically USB3) and it works great. I put a 300MB file on it in under a minute then tried it through a 2.0 port and it took just over 3 min.

nVidia cards have been in macs a lot longer than ATI cards so there tends to be better support for them from what I've noticed. Someone else can correct me on that if they want to.

Sounds like we're doing the same things. I can run StarCraft II at Ultra but decided to just run it at high for a bit of a speed boost. The graphics look fine to me at that point anyway. Either of those two ATI cards look sweet, though I'm not that familiar with the 5850.

Mobo, CPU, RAM and HD all look like sound choices to me. I've heard good things about the ATI Radeon 5770 but I personally use a nVidia GeForce 9800GT. I run Adobe After Effects CS5 and Apple's Final Cut Pro pretty intensively and I'm happy with the performance.
