Update No.3 - A Bit of a Wild-Card
I decided to try installing High Sierra on this build. I understand there are a few people who might wish to stay with an older version of macOS for software reasons and are unable to find an easier motherboard like a Z390 or Z490.
This EFI will work to install High Sierra and also run it once installed. HOWEVER there are a few issues you need to be aware of if you wish to try it:
1) No USB3. All ports available are activated, but only as USB2.0. The Z590 chipset and a Comet Lake CPU will not give USB3 because of the USB3.2 Gen 2 nature of the new USB stack unsupported back in High Sierra.
2) No Ethernet. If you wish to use this you will need to buy a supported Realtek USB Ethernet adapter.
3) The AppleALC in the original EFI will not work for this set-up so I've used VoodooHDA instead.
4) Intel wireless has to be activated using the itlwm.kext rather than AirportItlwm, which does not support High Sierra. Because of this you need to manually enter your own SSID access-point name and password in the internal Info.plist using a plain-text editor (right-click on kext, select Show Package Contents, go to Contents folder).
5) System-Definition is still iMac18,3. CPU is spoofed to Coffee Lake.
6) The version of OpenCore used is 0.6.8, so a very old version.
The system is very reliable. It sleeps and wakes as it should.
Note: As usual the serial-numbers in the config.plist are DUMMIES. Change them to your own.
