My biggest problem has been an unbootable HD (kernel panic during boot) that was bootable to a fully-functional 10.6.3 using the iBoot CD or via safe-mode on the HD. This seems to have been due to an errant kext, so I've resinstalled SL & and 10.6.3 combo and am working through the process again.

You may have already found the problem. It's the WD Caviar Green HD! For unknown reason (at least to me!), this drive cannot boot with GUID! There are few threads talking about it recently.
I replace it with a Samsung HD. I can boot from HD right the way...!
The WD HD stopped my Hackintosh project for a couple of months. I have a "almost" fully working 10.6.6.
