Update: I managed to boot in to the High Sierra installer and successfully install High Sierra. Will edit this reply with steps to succes.
Edit: So I did it. I managed to boot the installer, installed 10.13.0 and even successfully updated to 10.13.1 (10.13.0 wasn't allowing me to install Nvidia drivers or else I wouldn't have bothered).
I did it by copying all the kexts and drivers I used on my previous Sierra Hackintosh to my USB installer’s EFI folder, putting the kexts in kexts>10.13 as well as kexts>other. I basically replicated what worked fine on Sierra (except my config.plist, that was a mess so I set it up from scratch now) and removed and/or changed anything that differed from it. Hope this can help someone.
