Here's a page I had bookmarked on the mini for use in Leopard - don't know if all of it transfers over to SL, probably most if not all - you might bookmark it for reference anyway.

Well, they work for me in applications as well as the Finder (for text and files).

Not sure exactly what your issue is preventing their use... :confused:

Cmd+V does actually work.

Going Bald, the good news is that they've updated the Keyboard Shortcut list for Snow Leopard:

In the meantime, for those of you coming from the Windows World, you can start with this nice, short blog post from Using Mac that Going Bald referenced above:
