according to dortania and my config. the device-id should be set to DATA, not string.
Did you check dortania website for documentation?
omg thank you, that simple change made it work. from sting to data.

I did read the dortania website but must have missed that.

I'm having a similar issue. I don't have any ethernet interface in System Preferences and can't add one (the plus button only show Wi-Fi and Bluetooth PAN).

ASUS PRIME Z490-A
macOS 10.15.7 (OpenCore 0.6.5)

I have attached my config.plist and PCIe data dump from Hackintool.

Any ideas what I'm missing here?

@NwSkipper The Device Path for your Ethernet controller is shows as - PciRoot(0x0)/Pci(0x1C,0x4)/Pci(0x0,0x0) in the pcidevices.txt file you provided.

The Device Path used for your ethernet controller in your config.plist is - PciRoot(0x0)/Pci(0x1f,0x6) this is wrong.

You might also want to look at using the correct model description, this is cosmetic but your Ethernet controller is an I225-V not an Intel I219 v7.

If you change the Device Path for the Ethernet controller in your config.plsit to PciRoot(0x0)/Pci(0x1C,0x4)/Pci(0x0,0x0) your Ethernet port might work.
