I am looking for a great and very native graphic card for Monterey and Ventura.
I wish to have a great discussing about the GPU and hope to get deeper info.

Have you seen the GPU buyer's guide on this site ? The AMD RX6600 is a newer more efficient card that works and is not included in that list.

Yes, the Sapphire RX 5700 XT is supported in macOS Monterey and Ventura. It was first supported in macOS Catalina 10.15.1, so Catalina and Big Sur fully support this card.

However, you are unlikely to find a New RX 5700 XT for sale.

Secondhand the RX 5700 XT can cost as much as a new RX 6600.

The RX 6600 or RX 6600 XT are supported since the release of macOS Monterey 12.1

I am using a RX 6600 XT in my main Z690 system. I found and bought a RX 6800 XT on eBay. Personally, since I don't game, the RX 580/590 and RX 6600 XT are fine for my general purpose computing.

New RX 580 is now under $100 USD new.
