Clover to OPENCORE on PC with already mojave and catalina installed HOW to boot?

Hi perhaps i'm a bit stupid... i have 3 disks with 3 efi
disk 1 --- efi clover .. mojave and catalina osx and a bigsur os install (in standby)
disk 2 .. efi clover .. mojave ...> efi clover replaced with efi opencore
disk 3 . efi windows

when boot i see this:
efi = efi of windows
windows = boot directly to windows
backup of osx 1 TM backups
backup of osx 2 are TM backups
reset nvram

I NOt SEE all other disk and mac osx (catalina, mojave)
i need to erase all other efi clover partitions? or replacing all with efi opencore except that windows efi?

If i use an USB with opencore what have to do with the EFI clovers?
I need to boot one mojave or catalina osx to see if opencore is settled right.

then if all is right i will uupdate to bigsur

I see that opencore need drive disk all to have 200 mb EFI partition also for theonly data disk ? right?
