Found an offer for 2 x 40gb Intel x25 ssd's. I was wanting to dual boot OSX Lion and Windows 7, although I will rarely use windows. I wanted to have 2 additional TB+ drives for storage, 1 specifically for Mac and the other shared. Would 40gb be enough for the OS and a few serious programs or should I invest in one bigger SSD for mac? How much space does the initial install take up?

I have a lightly loaded system using 20GB (soon to grow to 2x that size when I add office and other music recording applications). However, I've moved my iTunes library onto a NAS. My 2nd system uses a 60GB SSD, but since I don't use Win7 and Ubuntu very much, I've got them on a partitioned 2nd HDD. Don't forget to leave about 10GB head room on your SSD for swap and other OS housekeeping.

BTW, my new Z68X-UD3H system will use a 120GB solely for Lion.

So, I'd recommend a minimum of 60GB and either moving your iTunes library or your User folder to one of the larger HDDs.
