Got everything back working as before by following this post and replacing / dropping the DMAR tables.

Cancelled my order for a Mac Studio as plenty of life still...
Got my ASUS XG-C100C (AQ107) 10GBe card working by updating to the latest OC 0.8.0 with "Prefer Shikumo's Aquantia patch" commit.

Yes I have just completed my change from Clover to OpenCore just now. All ok and running nicely.
I followed this guide carefully and installed OC to a USB stick and eventually booted from it. When all was running well I replaced the Clover EFI folder on my startup SSD with the OC EFI from the...
Current EFI attached for reference, using Clover 5118 and iMac19,1 with iGPU enabled as headless, graphics output using 5700XT card. Generate or copy over your existing serial numbers to the config file, random values exist within.
Native NVRAM needs to be enabled by disabling the BIOS cfg-lock...
F12d but I notice there are new beta BIOS (F12h) from Gigabyte uploaded June 2nd. Might have the cfg-lock disabled by default in these?

Yes it will throw the prohibited sign occasionally which I guess means our mem maps are right on the edge when booting with multiple add on devices. I have the Titan Ridge PCI-e, Fenvi 919, firewire card, fan controller and every USB port connected.
I get that every now and again with OCQuirks as the memory fix and have most of my PCI slots used. It used to happen every second boot but much less frequently now.
What would be the correct Clover device properties to use for a 5700XT at PciRoot(0x0)/Pci(0x1,0x0)/Pci(0x0,0x0)/Pci(0x0,0x0)/Pci(0x0,0x0)
and any advantage to doing it this way than using the SSDT method?
That's really odd. The only other difference between our setups is your Vega 64. Try removing the 5700XT SSDT in ACPI > Patched and the dAGMP kext.
BIOS settings all normal?
It wasn't needed on my system but have a look at the sleep / wake fix posted over here...
