The "problem" is only consist of that you will need to use the HD4000 for the installation, and when you are ready, disable in the BIOS the integrated graphics and put it in the HD6870. After these you should be able to boot without any issues.

It means that the "K" word in the CPU's model name indicate the overclock ability. But with a B75 chipset it's not possible to overclock. So, if you don't need it, go for a cheaper CPU without OC possibilty.

The only card which suffice your needs is the HD6870. They are not specific to Sandy Bridge Customacs, you are able to use it until Apple discontinue their support.

I don't know your stimulus threshold therefore I can't help. The FD R4 case has a good sound-proofing I guess.

Well, without AHCI mode in the BIOS it is already impossisble. Two, I'm very new to this but after reading through the topics and the builds on here, transforming a server to Hacktintosh is very complicated because of the incompatible devices; like your integrated graphics.
