While I haven't done a lot of testing, I do get a memory allocation error if Generate P and C States are used in "org.chameleon.Boot.plist" with an overlocked setup. It doesn't seem to matter what the specific settings are.
I'm not sure if this will help, but on my overclocked dual boot setup, I can run the default Prime95 torture test for 13+ hours on Windows 8.1 and that Generate P and C States is a no go; it prevents Yosemite from booting at all.

While I can't be absolutely certain about ALL of the listed motherboards, I am absolutely certain about the GA-Z87X-UD5H being unable to update the UEFI from F8 to F9 via the Q-Flash utility. I had to do it via the @BIOS utility, which meant booting up Windows first.

I have what's essentially the "opposite" problem: my Hackintosh doesn't STAY in sleep mode, it wakes up within a few seconds (although the monitor stays in sleep mode and I can simply press a key to login).
Try disabling Wake on LAN in the UEFI.

I have the EVGA 03G-P4-2781-KR, so I guess that's why LuxMark works for me (and I imagine other OpenCL apps will too). I don't know if I'll be making another Hackintosh anytime soon, but I'd rather know what to look out for than buy something that'll cause frustrations.

I also share your concerns, but I'm curious as to which apps you've encountered these crashes with. The only experience I have with OpenCL on Mavericks with a GTX 780 is LuxMark v2.1 and I've not had any crashes.
