I think I have managed to install Monterrey on an old 160GB Hitachi laying around. (It has seen better days.)
But now the boot option does not even appear on boot menu and when I boot from the USB disk and opt to boot from the Hitachi, I get this:

I wasn't expecting it to be this much complicated. But I have made some progress so far.
I managed to write my USB disk, mount the EFI partition and even find the necessary files for my motherboard (Asus Pro WS X299 Sage II):
