I didn't realize I was a noob. I removed those.
After all these changes, I still remain stuck at this problem, when booting without 'nv_disable=1'. Maybe it's wishful thinking that I could boot Catalina with a Fermi card. I'm very limited to my choices here, as:

Good news, I had a successful boot (with nv_disable set)
I found my SATA HDD's /Volumes/EFI/EFI folder (attached to this post as "HDD_SATA_EFI.zip". This is the one that does not make it past early boot (screenshots from first post). I'm not sure if its worth fixing right now. I'll stick to...
I think the fix is simple, but I have not figured it out
- I cannot boot into the MacOS installer without NV_Disable =1, as it stalls on "Stuck on gIOScreenLockState 3"
- I've successfully booted into the MacOS installer (patched 10.15.7) with a NV_Disable = 1, but the installer fails halfway...
