Update:
I figured out it was SSDT.aml file created with ssdtPRGen.sh. I can't use it, I need to use the one from the installation.
I tried the script with both -w 2 and -w 3 but it does not work.
I guess it's Ok to keep the one from the installation but I can have some power issue right ?

Ok I figured out that it was the config.plist.
Also when we create a custom SSDT.aml file, the original one is called SSDT-EC.aml, maybe it was also that.
So now I'm writing this message from Mojave and without USB stick plugged !

How do you explain the fact that it works when there is the usb stick (used for installation) plugged ?
Ok I don't know why but when I plug the USB drive (which is not the device I boot on) I CAN boot very quickly, but when I unplug it and try to boot I 'm stuck.
It's a DDR5 ram (the exact S/N is GT710-SL-1GD5-BRK).

So I just received the GT 710, I managed to install macOS Mojave. But when I reboot the computer, I'm stucked at this point :

When I get the GPU should I still use the HD2500 plist file or should I use the HD4000 plist file ?
Also what does graphics acceleration really means ? Can I just boot and see the desktop or does mac OS use graphics acceleration for the whole UI ?
